Vegan Whipped Matcha Green Tea Latte

- You’ll start by making the aquafaba (the whipped foam). To make aquafaba, drain a can of chickpeas into a bowl. Pour that liquid into a stand or hand mixer. With the whisk attachment, beat the liquid until it fluffs up. It takes about a minute or so and it should hold the peaks as if you were making meringue egg whites!
- In a separate bowl, whisk together the matcha powder, coconut sugar and hot water. Whisk it until it’s as smooth as possible and the sugar granules are dissolved.
- Turn the mixer back on and slowly stream in the matcha mixture. Just keep whipping until combined and the contents of the bowl have turned green!
- Now it’s time to serve it! We used MALK almond milk and ice. Add a couple ice cubes, fill glass up about 3/4 of the way and top with a few generous spoonfuls of the whipped matcha mixture on top. Add a straw, stir and enjoy!
