Vegan Scalloped Potatoes

Creamy, comforting, and completely dairy-free, these vegan scalloped potatoes are a delicious addition to any meal. Made with a rich, velvety cashew or coconut-based sauce, they bake to golden perfection—deliciously indulgent yet entirely plant-based!

Directions:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Blend plant-based milk, cashews (or flour), nutritional yeast, Dijon mustard, salt, pepper, and cornstarch until smooth.
  3. In a saucepan, heat olive oil over medium heat. Sauté onions and garlic until soft. Pour in the blended sauce and cook until slightly thickened.
  4. Layer half the potatoes in the baking dish, pour half the sauce over, then repeat.
  5. Cover with foil and bake for 40 minutes. Remove foil and bake another 15-20 minutes until golden and bubbling.
  6. Garnish with fresh herbs and serve warm. Enjoy!
