Vegan Scalloped Potatoes
Directions:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Blend plant-based milk, cashews (or flour), nutritional yeast, Dijon mustard, salt, pepper, and cornstarch until smooth.
- In a saucepan, heat olive oil over medium heat. Sauté onions and garlic until soft. Pour in the blended sauce and cook until slightly thickened.
- Layer half the potatoes in the baking dish, pour half the sauce over, then repeat.
- Cover with foil and bake for 40 minutes. Remove foil and bake another 15-20 minutes until golden and bubbling.
- Garnish with fresh herbs and serve warm. Enjoy!
