Make-Ahead Breakfast Burritos
Directions:
- In a bowl, whisk together the eggs, milk, salt, and pepper. Heat the olive oil or butter in a large skillet over medium heat. Pour in the egg mixture and scramble until fully cooked. Remove from heat.
- Lay out the tortillas and evenly divide the scrambled eggs among them. Add the cooked sausage, shredded cheese, sautéed peppers and onions, and any additional toppings you like. Drizzle with salsa if using.
- Fold in the sides of each tortilla, then roll them up tightly to form burritos. Wrap each burrito individually in aluminum foil.
- Place the wrapped burritos in a large freezer-safe bag or container. Store in the freezer for up to 3 months. To reheat, unwrap the burrito and microwave for 2-3 minutes, or until heated through. Alternatively, bake in the oven at 350°F (175°C) for 15-20 minutes.
