Garlic Butter Fiddlehead Pasta
Directions:
- Cook spaghetti noodles to al dente and reserve ½ cup of pasta water.
- Bring a pot of salted water to a boil. Add the fiddlehead ferns and cook for 5-7 minutes, or until they are tender but still crisp. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and shallots and sauté for 1-2 minutes, or until fragrant.
- Add the cooked fiddlehead ferns to the skillet with the garlic butter. Toss to coat evenly and cook for an additional 2-3 minutes, allowing the flavours to meld together. Add cooked pasta and ¼ cup of pasta water to the pan and toss to coat with butter.
- Season with salt and pepper to taste.
- Transfer to a serving dish and garnish with lemon wedges, if desired.
- Serve hot and enjoy the delicious taste of spring!
