Egg Bites

These S-Bucks-style egg bites are the perfect make-ahead breakfast for busy mornings. Light, fluffy, and packed with protein, they’re easy to customize with your favourite ingredients like bacon, cheese, or veggies. Whether you’re rushing out the door or enjoying a leisurely morning, these savoury bites offer a delicious and satisfying start to your day.

Directions:

  1. Preheat your oven to 300°F (150°C). Place a baking dish filled with water on the bottom rack to create steam.
  2. In a blender, combine the eggs, cottage cheese, Gruyère, Monterey Jack, salt, pepper, and smoked paprika. Blend until smooth.
  3. Spray a silicone muffin tray or silicone egg bite molds with non-stick cooking spray. If using bacon or spinach, add a little to each mold.
  4. Pour the egg mixture into each mold, filling them about three-quarters full. Place the tray on the middle rack and bake for 25-30 minutes or until the egg bites are set and slightly golden on top.
  5. Let the egg bites cool slightly before removing them from the molds. Serve warm, or store in the fridge for up to 4 days.

Tip: For a sous vide-like texture, bake at a lower temperature (275°F/135°C) for 50-60 minutes.
