Egg Bites
Directions:
- Preheat your oven to 300°F (150°C). Place a baking dish filled with water on the bottom rack to create steam.
- In a blender, combine the eggs, cottage cheese, Gruyère, Monterey Jack, salt, pepper, and smoked paprika. Blend until smooth.
- Spray a silicone muffin tray or silicone egg bite molds with non-stick cooking spray. If using bacon or spinach, add a little to each mold.
- Pour the egg mixture into each mold, filling them about three-quarters full. Place the tray on the middle rack and bake for 25-30 minutes or until the egg bites are set and slightly golden on top.
- Let the egg bites cool slightly before removing them from the molds. Serve warm, or store in the fridge for up to 4 days.
Tip: For a sous vide-like texture, bake at a lower temperature (275°F/135°C) for 50-60 minutes.
