Asparagus Salad with Dill & Yogurt Dressing
This recipe is taking my 3 favorite, early spring vegetables-spinach, radish and asparagus, and tossing them together to make a really simple, but delicious salad. The creaminess of the steamed asparagus is a great contrast to the crunchiness of the radish.
Directions
- Steam the asparagus and then roughly chop it. Depending on the thickness of the asparagus, it will take anywhere from 3-5 minutes. Once cooked, run it under cold water to stop the cooking process.
- To make the dressing, mix the olive oil, yogurt, lemon juice, dill, salt and garlic together in a small bowl.
- Toss all of the ingredients in a bowl and mix with the yogurt dill dressing.
