Healthy-ish Ice Cream Sandwiches
Directions
- Preheat oven to 380 degrees.
- Combine dry ingredients and mix very well. Add wet and mix well. Make little balls about 2 tablespoons each. Place on parchment lined cookie sheet and flatten slightly.
- For soft cookies, refrigerate until cold (otherwise, just bake right away).
- Bake 9 minutes.
- Remove from oven when they’re still a little undercooked, then let cool 10 minutes before removing from the tray. They’ll continue to cook while cooling.
- Once cooled scoop ice cream filling in the middle. We used So Delicious Coconut Milk Cookie Dough.
- Freeze overnight and serve!
