Chia Pudding
Directions:
- In a bowl or jar, whisk together the chia seeds, coconut milk, coconut cream, maple syrup or honey, vanilla extract, and a pinch of salt until well combined.
- Cover and refrigerate the mixture for at least 2 hours, or overnight. Stir the pudding after 30 minutes to prevent clumping. The chia seeds will absorb the liquid and create a thick, creamy consistency.
- Once the pudding has set, give it a good stir. Spoon it into bowls or jars, and add your favorite toppings like fresh fruit, nuts, seeds, shredded coconut, or granola.
Tip: For an even richer flavor, use a blend of coconut milk and almond milk, and let the pudding chill overnight for maximum creaminess.
