Refreshing Watermelon Salad
Directions:
- Cube the watermelon and dice the cucumber. Thinly slice the red onion and chop the mint and basil leaves.
- In a large bowl, combine the watermelon, cucumber, red onion, mint, and basil.
- Gently fold in the crumbled feta cheese, being careful not to break the cubes of watermelon.
- In a small bowl, whisk together the olive oil, balsamic vinegar (or lime juice), salt, and pepper.
- Drizzle the dressing over the salad and gently toss to combine all ingredients.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld together. Enjoy this refreshing salad as a light lunch or a side dish!
Tips:
For extra flavour, add a handful of arugula or baby spinach.
Toasted pine nuts or sliced almonds can add a nice crunch to the salad.
